Yeast and baking ingredients leader Lesaffre Yeast
Corp. has opened a facility aimed at bringing the latest
pizza technology, equipment and expertise to its
baking customers. Milwaukee-based Lesaffre's new
Pizza Innovation Center, located in Lisle, Illinois, was
launched in conjunction with the North American
Pizza & Culinary Academy.
The center features the latest and best equipment,
including a range of pizza ovens covering many technologies and styles; several types of mixing and dough
handling equipment; a state of the art dough preparation room that can replicate any 'real world' climate;
a commercial kitchen; and an innovative kitchen
instructional area.
"This new facility gives us more opportunity to innovate with key pizza clients who want to create new
products, troubleshoot their process, or train their
people," says Tom Benner, president and CEO.

IDDBA cake
challenge
Lindsay Anderson - from Lunds & Byerlys in
Minneapolis - was named the winner of IDDBA's
23rd annual Cake Decorating Challenge at IDDBA
'18 in New Orleans. Natasha Damm, from Garden
Home Market Place in Portland, Oregon, and Randy
Stratton, from Dillons in Wichita, Kansas, placed
second and third, respectively. The competition
included filling an eight-foot bakery case, two
custom cakes in the theme of New Orleans' 300th
anniversary, and a wedding cake.
New this year was the Best Tasting Cake Award,
judged by Joshua John Russell from in2food and
awarded to Damm on Sunday.

Consumer eating,
health focus shifts
with age
When it comes to eating with an eye toward
health concerns, priorities shift as consumers
pass the 50-year mark, according to data
released recently by the International Food
Information Council. Cardiovascular health
and muscle health/mobility rank atop decision
drivers of adults over 50 years of age, eclipsing
maintaining a healthy weight.
The conclusions were based on a recent IFIC
study of more than 1,000 adults aged 50 or
greater, research that was supported by Abbott
Laboratories, a major health care company.

important in eating decisions.
Among the surveyed group, 80 percent said
heart health was very or somewhat important
in eating decisions, and 75 percent said muscle
health/mobility were very or somewhat
important. Just slightly behind and tied for third
in the survey were energy and brain function
(memory, focus and cognition), at 74 percent.
