Foodies, foodservice
Twenty-five years ago, I made 11 bucks an hour and lived on 18th Street
in San Francisco's Mission district, just east of Mission Dolores Park.
Foodies will recognize my old block as the present-day home of
Tartine Bakery, Delfina, Yuzuki, Namu Gaji and a couple of Bi-Rites
(Market, Creamery).
To repeat, that's one city block. Widen the net just a bit and you'll find
a ridiculous number of top-shelf restaurants and other food and drink
spots that have made the Mission one of the centers of the gastronomic universe.
Every time I go back to San Francisco, I'm amazed by the changes.
A Google bus now stops across the street from my old apartment,
ferrying techies to their jobs in Silicon Valley. If you tacked a zero on
to my 11 bucks an hour, I just might be able to rent a place there. A very
small place.
My latest trip -to cover the Specialty Food Association's Winter
Fancy Food Show, and to interview Bi-Rite's Sam Mogannam and Tom
McGuigan -really drove home how much not only San Francisco but
the entire food world has changed.

It also underlined the excitement surrounding instore deli, bakery
and prepared foods. The Bi-Rite Market on 18th Street, for instance,
has a kitchen right in the middle of the store. In 1997, when he and
his brother opened their version of Bi-Rite (the store opened in 1940),
Mogannam, a chef by training, had to cut through all kinds of red tape
to get the City of San Francisco to let him put in a kitchen. Back then, it
just wasn't done.
Nowadays, Bi-Rite's nightly dinners and other ready-to-eat, grab 'n
go and heat-and-eat retail foodservice offerings are a huge part of
the company's success. And that momentum has carried over into a
catering business that's growing by leaps and bounds.
When I returned home to Kansas City, it struck me that, in a way, every
city these days is San Francisco. I'll never get up to speed on all the
great local, artisan, ethnic and farm-to-fork stuff going on in KC. Even
the fancy brews from my hometown, Lincoln, Nebraska, are well-represented in area liquor stores.
There are a lot of big and discerning appetites out there, and they're
willing to pay for convenience. Grocery retailers and c-stores looking to
differentiate themselves should be licking their chops.
